Pasta in Spicy White Sauce

Combine fresh home made white pasta sauce with store bought pesto sauce for an simple yet delicious creamy pasta for a quick dinner meal or as an elegant meal for a special occasion. Pasta sauce can be made in advance and stored for a few days, making it handy for a quick comforting meal.

Pasta in Spicy White Sauce


    To make white sauce
  1. 2 tbsp butter
  2. 2 tbsp all purpose flour
  3. 2 cups warm milk (little more if using low fat)
  4. 1/2 tsp black pepper
  5. Salt to taste
  6. Pinch of nutmeg
  7. To make pasta
  8. 2 tbsp oil + salt to boil pasta
  9. Pasta sauce
  10. 2 cups dried pasta
  11. 1 large onions sliced
  12. 4-5 garlic cloves sliced
  13. 10 black olives sliced
  14. 10-12 jalapaneos slices
  15. 1/4 cup corn
  16. 1/2 cup peas frozen
  17. 1/2 cup mushrooms sliced
  18. 1/4 cup pesto store bought
  19. 1/2 cup parmesan cheese grated
  20. 1/4 tsp dried basil
  21. 1/4 tsp dried oregano
  22. 1 tbsp oil
  23. Salt to taste


    To make white sauce
  1. Heat butter in a sauce pan on low heat. Once it melts add flour and stir. Cook the flour and butter mixture frequently until flour is cooked. This takes about 2-3 minutes.
  2. Add warm milk 1/4 cup at a time. Use a whisk to stir frequently. Keep adding milk until a sauce like consistency is reached. It should not be too runny or too thick. 1 1/2 cup to 2 cups of milk will be required.
  3. Add black pepper, salt and pinch of freshly grated nutmeg to the sauce.
  4. Turn off heat and keep it aside.
  5. To make pasta
  6. Heat water in a large pot. Add oil and salt and let the water come to a boil. Add pasta and let it cook for 9-12 minutes as per instructions on the package. Do not cook the pasta completely as it will turn mushy. Once cooked drain off water and keep it aside. Do not rinse it under water.
  7. Heat oil in a large pan. Add sliced garlic and onions. Saute for 1-2 minutes.
  8. Add olives, jalapenos, corn, peas, mushrooms, dried basil, dried oregano and salt. Saute everything for 3-4 minutes.
  9. Stir in pesto and white pasta sauce. Let it cook for a minute.
  10. Add cooked pasta and mix well, making sure everything is well mixed.
  11. Add grated parmesan cheese, stir and turn off heat. If you want the pasta to be more cheesy add extra parmesan cheese.
  12. Serve hot with fresh baked garlic bread.
